From fresh fish to octopus and squid, mussels and prawns, Mallorca is a true paradise for all seafood lovers! You would love to try a new unique seafood dish this summer but need some inspiration? Why not try prawn with pickled prickly pear and avocado hummus? Read on for the grilled prawn recipe created by Michelin chef Andreu Genestra.

Grilled Prawn Recipe

A delicious and easy to cook recipe that is perfect for hot summer days! The mix of salty avocado hummus and sweet prickly pear puree is a true culinary delight.

Avocado Hummus

  • 6 avocados
  • 200 gr chickpeas
  • 3 limes
  • 15 ml sesame oil

  • 10 ml soy
  • ½ tbs salt
  • Lemon juice
  • 25 ml virgin olive oil

Mash all ingredients except olive oil. Then drizzle with the oil until the mixture is creamy. 

Pickled Prickly Pear

  • 1 onion cut in julienne strips
  • 2 cloves garlic
  • 250 ml olive oil
  • 2 carrots
  • grain pepper

  • 25 gr sweet paprika
  • 50 ml white wine
  • 1 bay leaf
  • 125 ml sherry vinegar
  • 100 ml prickly pear puree

Chop the onion and garlic finely. Then fry in the oil and add finely chopped carrot. Add paprika once the vegetables, bay leaf, white wine and pepper have cooked and let the alcohol evaporate. At last, add the vinegar and prickly pear puree to finish.

Marinated Turnip

  • 1 turnip
  • mint
  • lime
  • oil 
  • salt

Slice the turnip into small brumoix and marinate it with the rest of the ingredients.

Cinnamon grilled Prawns

Preheat the grill to 120°C. Put cinnamon sticks on the grill in order to get a smoked effect once the prawns are added. Leave the prawns on the grill for only 2 minutes to avoid overcooking. For the composition, decorate the plate with the avocado hummus, prickly pear puree and marinated turnip. Put one or a few more grilled prawns on top and add edible flowers if you like. Last but not least, enjoy this exquisite dish and a new taste sensation with your family and friends!
